A vibrant salad combining crunchy walnuts, crisp apples, and tart cranberries, perfect as a refreshing side or light lunch.
Ingredients
- Mixed greens (spinach and arugula)
- Apples (Granny Smith or Honeycrisp)
- Dried cranberries
- Walnuts (toasted)
- Feta cheese (optional)
- Olive oil
- Apple cider vinegar
- Honey (or maple syrup)
- Dijon mustard
- Salt and pepper
Instructions
- Prep your ingredients: Chop the apples (leave the skin on for color and texture) and roughly chop the walnuts if they’re not already.
- Make the dressing: In a small bowl, whisk together olive oil, apple cider vinegar, honey, mustard, salt, and pepper until emulsified.
- Toss everything together: In a large bowl, combine mixed greens, apples, cranberries, and walnuts. Drizzle the dressing over and toss lightly to combine.
- Finish with cheese: If using feta, sprinkle it over the top just before serving.
Notes
Serve immediately for the best flavor and texture. Store leftovers in an airtight container in the fridge for up to two days.
