- 4–5 medium-sized fresh peaches, ripe but firm
- 1/2 cup unsalted butter, plus extra for greasing
- 1 cup brown sugar, packed
- 1/4 cup bourbon
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with butter, and set it aside.
- Slice your peaches in half, remove the pits, and cut them into wedges.
- In a skillet over medium heat, melt 1/2 cup of butter. Add the brown sugar and bourbon, stirring until smooth. Toss in the peach wedges and cook for about 5 minutes until they start to soften and caramelize.
- Pour the bourbon-peach mixture into the prepared cake pan, spreading the peaches evenly across the bottom.
- In a mixing bowl, combine flour, baking powder, and salt.
- In another bowl, cream together the granulated sugar and remaining 1/2 cup butter until light and fluffy. Add in the eggs one at a time, then stir in the vanilla.
- Gradually mix in the dry ingredients until just combined. Pour the batter over the caramelized peaches.
- Bake for 40-45 minutes or until a toothpick comes out clean from the center.
- Let it cool for 10 minutes, then invert onto a serving plate.
Notes
This cake is best enjoyed warm. Serve with ice cream or whipped cream for extra indulgence.
