Description
A vibrant salad that balances sweet apple slices, tart cranberries, and crunchy pecans, perfect for any occasion.
Ingredients
Scale
- 4 cups mixed salad greens (spinach, arugula, or your favorite lettuce)
- 1 large apple, thinly sliced (Honeycrisp or Granny Smith work well)
- 1/2 cup dried cranberries
- 1/2 cup pecans, roughly chopped
- 1/4 cup feta cheese (optional)
- 1/4 cup extra virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey (or maple syrup for a vegan option)
- Salt and pepper to taste
Instructions
- Gather all your ingredients and wash the salad greens thoroughly.
- Combine the mixed greens, apple slices, cranberries, and pecans in a large bowl. If you’re using feta, sprinkle that in too.
- Whisk together the olive oil, apple cider vinegar, honey, salt, and pepper in a small bowl.
- Drizzle the dressing over your salad and toss gently to combine—just enough to coat everything without mushing the apples.
- Serve immediately, or chill for a few minutes if you prefer it colder.
Notes
To prevent apple slices from browning, slice just before mixing the salad or toss them in lemon juice if prepped ahead.
