Delicious no-bake truffles made with Biscoff cookies and cream cheese, coated in crushed cookies for a sweet indulgence.

Ingredients

Scale
  • 250 grams of Biscoff cookies
  • 100 grams of cream cheese, softened
  • 100 grams of white chocolate, melted
  • A pinch of salt
  • Extra crushed Biscoff cookies for rolling

Instructions

  1. Crush the cookies: Add the Biscoff cookies to a food processor and pulse until you have fine crumbs.
  2. Mix it up: In a mixing bowl, combine the cookie crumbs, softened cream cheese, melted white chocolate, and salt.
  3. Form the truffles: Scoop out a tablespoon of the mixture and roll it into a ball.
  4. Chill: Place all the rolled truffles on a lined baking sheet and pop them in the fridge for at least 30 minutes.
  5. Coat them: Roll each chilled truffle in the extra crushed Biscoff cookies just before serving.
  6. Enjoy: Serve immediately or keep them in the fridge until ready to serve.

Notes

For best results, use high-quality chocolate for melting. Store leftover truffles in an airtight container in the fridge for up to a week.
