Description

Deliciously chewy oatmeal cranberry bars that are perfect for breakfast, snacks, or dessert, combining wholesome oats with tart cranberries and a touch of sweetness.

Ingredients

Scale
  • 2 cups rolled oats
  • 1 cup whole wheat flour
  • ½ cup brown sugar
  • ½ cup honey or maple syrup
  • 1 cup dried cranberries
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper for easy removal later.
  2. In a large bowl, combine the oats, flour, brown sugar, baking soda, salt, and cinnamon. Mix well.
  3. In a separate bowl, whisk together the honey (or maple syrup), vanilla, and any liquid ingredients.
  4. Pour the wet mixture into the dry ingredients and stir until fully combined. Fold in the dried cranberries.
  5. Spread the mixture evenly into the prepared baking pan and press down firmly to ensure they hold together after baking.
  6. Bake for about 25 minutes, or until golden brown. Let them cool in the pan before slicing into squares.

Notes

These bars can be enjoyed on their own or with nut butter or cream cheese. They’re also great crumbled over yogurt for breakfast.
