Description

A festive cranberry bread drizzled with orange glaze, perfect for brunch or holidays.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup milk
  • 1 cup cranberries, fresh or frozen
  • 1 tbsp orange zest
  • 1/2 cup orange juice
  • 1/4 cup melted butter

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Whisk together your dry ingredients: flour, sugar, baking powder, baking soda, and salt in a large bowl.
  3. Mix the eggs, milk, melted butter, and orange juice in another bowl until fully combined.
  4. Pour the wet mixture into the dry ingredients, folding gently to combine until there are no dry spots.
  5. Gently fold in the cranberries and orange zest, being careful not to overmix.
  6. Pour the batter into your greased loaf pan and bake for about 50-60 minutes, or until a toothpick comes out clean.
  7. Whisk together the glaze ingredients once the bread cools; drizzle it over the loaf once it’s nice and cool.

Notes

For best results, let the bread cool completely before glazing to avoid a sticky mess.
