- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/2 cup pumpkin puree
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- 1/4 cup cream cheese, softened
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Whisk together the flour, oats, baking soda, pumpkin pie spice, and salt in a bowl. Set aside.
- Cream together the softened butter and brown sugar until fluffy in another bowl.
- Add in the pumpkin puree and vanilla, mixing until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring just until combined—don’t overmix!
- Scoop tablespoon-sized rounds onto the baking sheets, giving them some space to spread.
- Bake for 12-15 minutes, or until the edges are lightly golden. Let them cool completely.
- Beat together powdered sugar, cream cheese, vanilla, and a pinch of salt until smooth while the cookies cool.
- Dollop a spoonful of filling on the flat side of one cookie, then top with another cookie, pressing gently.
Notes
Use fresh pumpkin puree for the best flavor. Store in an airtight container for up to 5 days.
