Description

A vibrant salad featuring peppery arugula, sweet apples, and a zesty dressing, perfect as a side dish or starter.

Ingredients

Scale
  • 4 cups fresh arugula
  • 2 apples (Granny Smith or Fuji)
  • 1/2 cup walnuts (toasted if desired)
  • 1/2 cup feta or goat cheese
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Prep your greens: Rinse the arugula thoroughly and let it dry completely.
  2. Slice the apples: Core and thinly slice your apples without peeling them.
  3. Toast those walnuts: If desired, toast in a dry skillet over medium heat for a few minutes.
  4. Make the dressing: Whisk together olive oil, apple cider vinegar, honey, and salt and pepper.
  5. Combine everything: Toss arugula, apple slices, walnuts, and cheese with the dressing until coated.
  6. Serve immediately for maximum crunch.

Notes

Best served fresh. If storing leftovers, keep the dressing separate to avoid sogginess.
